C is for Cookie.

My portion control issues were put into overdrive a few weeks back when I decided to bake with my housemates out of town. Warning. Never do this. No matter how much will power you think you have, you will eat all of the cookies.

SO a few people saw a photo on Instagram and wanted the recipe for the cookies as they are semi-healthy and absolutely delicious. Def my new fave.

I got the recipe from fellow blogger VegieZest and then added a few tweaks of my own.

 

JP’s Cookie Monster Goji Goodness….(aka Cookies. Addictive Cookies.)

1 Cup Whole Oats (I just used regular oats)

1 Cup Flour

1 Cup Chocolate Chips (Dark Chocolate…make it kinda healthy…)

2 tbs flax seeds (aka Linseed)

1/4 Cup butter (pretty sure I used salt reduced)

1/4 Cup Sour Cream (Sour LIGHT cream…like having a diet coke with a Big Mac)

1 Large Egg

1/2 Tsp Baking Soda

1/2 Tsp Baking Powder

1 Tsp Vanilla Extract

I also added Goji Berries. Do it. It’s amazeballs. It’s boss. It’s just really good.

 

What you do with all the stuff

Preheat the Oven to 180 C.

In a large bowl, add all the dry ingredients and mix well. If you’re a keen bean throw your hands in and mix it all around.

In another bowl roughly beat the egg with a fork and add the Sour Cream, Butter and Vanilla until smooth.

Add the wet ingredients to the dry mixture and mix till 2 Become Oneeeee (inspired by the Spice Girls recent Olympics performance). At first it will look a little dry but keep mixing and it will all work out.

Using a tray lined with baking paper, or greased tray, add spoonfuls of the mixture but keep them about 3-4cm apart as they do expand.

My mixture made about 25 cookies from memory. I ate them all. No Regrets. Ok there were a few regrets at the time, but none now. Oh my gosh I want some now.

Bake them for about 12 minuts and then let them cool on a wire tray. They do taste amazing warm but try to save some and let them cool completely.

And Voila! Amazing. Yum. Def will be a staple in the recipe book.
